The Strawberry Cake That Turned Out OK

The cake wasn't the only thing i had to do today, and I've never made a "scratch" cake anyway, so I used a mix. And a container of icing. The cake was strawberry, so I substituted cranberry/blueberry juice for the water. It turned the cake a love deep rose color! Here are some tips:

Put the eggs out, so they can reach room temperature and not be cold when you put them in the mix.

Mix your liquid ingredients first, including the eggs and oil.

Do a good job greasing and flouring the pan. If you don't know how, find out. I never do it well. I tried using the spray grease-oil stuff, which was fine, but then I emptied flour on top and couldn't get the gooey lumps out.

Some people like to save a little of the dry cake mix to flour the pan, so it tastes like the cake. That's a fabulous idea! I just never remember to do it. Maybe next time?

Be sure to use a timer and to put the timer where you can see it and/or hear it. If you can't see or hear it, you may forget about the cake. It WILL burn.

Put the hot cake pan on a wet towel, on top of thick upside-down glasses, to cool.

Don't ice the cake until it's cool. If you do, the icing will roll off!

 

Anyway, this cake looks pretty and tastes good. It turned out OK.

Who is Your Food Heathen?

Your Food Heathen is a 57 year old woman who has an iffy and uneducated palate. If my palate were in school it would be celebrating its 50th year in kindergarten. I can't tell the difference between the flavor of onions and scallions and I don't don't like either one, most of the time, because after I eat either, that's all I can taste. And who wants onion-flavored peanut butter cups?

I never eat out because it's just silly to pay someone to do things to food that I wouldn't do, even if i could. And why would I want to eat something that's so raw, it's still squirming? Wine? It's all the same thing: just makes me woozy.

What I cook and eat is healthy, easy, inexpensive food that I like the taste of.
